Social Incubator as a space for learning and promotion of local development: the case of the School Restaurant Eco Sol Bistro

The School Restaurant Eco Sol Bistro is an extension project developed in the Incubator
of Social and Solidary Technologies of the Federal University of Grande Dourados
(ITESS/UFGD), in partnership with the Nutrition Course, together with settlers of
Agrarian Reform and Quilombo, coming from entrepreneurship groups based on the
principles of Solidary Economy, which lacked specific actions with respect to applied
knowledge on gastronomy, meal production and food service management, with
consumer safety security and as a possibility to generate income. The project benefits
both this audience and the academic community. Structured on the quality tripod
hygienic-sanitary, sensory and nutritional), ambience and cost, it operates since October
2014. With lunch service, it uses food from family farming, mostly organic food,
ensuring five colors of fruits and vegetables a day, natural juice, homemade desserts and
a typical dish. The joint teaching-research includes academic students from the Masters
in Agribusiness and Graduation in Nutrition. It is expected that at the end of two years,
entrepreneurs are prepared to implement a similar service in their communities,
providing income generation, social inclusion, dissemination of Solidary Economy
principles and sustainable local development.
